Learn how to incorporate delicious alternative grains into healthy, gluten-free meals while ensuring that you do not miss out on vital nutrients.  This lecture offers an overview of gluten-free cooking with nutritional tips for both savory and sweet dishes. Foods made with gluten-free grains readily available at many local supermarkets will be available for students to sample in class.  Recipes will be provided but no actual cooking will occur in class.
