CourseGraphic Long before sorbet, fro yo, and gelato entered the dessert lexicon — 500 years to be exact — booza was the only frozen dairy-based ice cream game in town, courtesy of the Levant region of the Eastern Mediterranean. Because of its special ingredients and elasticity, booza promises to be smoother, denser, creamier, and more flavorful than modern day ice creams. Learn the Ottoman Empire origins of this delicacy and how it is made from a Republic of Booza store manager before trying out this revamped ancient ice cream at the only shop of its kind in the country. Our private, before public-hours tour includes interactive opportunities to crush, pound, and stretch this ancient ice cream, and a tasting of several different flavors of booza. Tour is open to adults and children ages 12+. Course fee applicable to all attending, regardless of age.
